Disease Etiology
Celiac disease (CD) is a chronic autoimmune disorder resulting in damage to the absorptive surface in the small intestine when gluten is ingested (1). Gluten is a storage protein found in wheat, barley and rye. CD may also be referred to as celiac sprue, non-tropical sprue, or gluten sensitive enteropathy.
